great adventure, but I'm ready to be back in my own little apartment.
Our time in Utah consisted of homework, BYU Women's Conference, the Hogle Zoo, Red Robin, making pretzels, and several days of food poisoning. In California we spent our days doing homework and studying for the series 7, sister missionaries, visits with grandparents, planting a flower, thrift store shipping, and waiting for the arrival of his mysterious little brother who left for his mission a week before our first date.
Sam is has been in Charlottie for the past week while I've stayed back in Utah for some extra family time. I've been very surprised how fast the week has gone and cannot wait for Samuel to pick me up at the Charlotte airport on Tuesday morning.
As if having to get on another flight because his was to full wasn't enough, everything seemed to go wrong as soon as he got there: the apartment that we'd been counting on for months was something short of a disaster and so he had to find a new apartment in one afternoon (it would've been fine except for the fact that a California background check can take up to 5 days), getting a new car would have to wait because in order to get one he'd need a NC license and we all know how fun the DMV is (especially when they need your social security card, don't take debit/credit cards, or checks with a PO box address on them).
Things only kept going from there. The cost of a rental car and hotel rooms exceeded what has been budgeted... along with everything else. So much for budgeting, right?
In the end, it's all worked out and I'm flying out tonight. Like I've mentioned, the past week has flown by and as hard as it will probably be tonight, I can't wait to be in my new little home. I have the sweetest husband who has taken the time to unpack everything and sent me pictures every step of the way.
I've said several goodbyes the past couple of days, but it's not real quite yet. It's hard to believe that it's finally here after waiting 6 months.

Pretzel Bites
1 1/2 cups warm water
1 tbsp sugar
2 tsp kosher salt
2 1/4 tsp instant yeast
4 1/2 cups all-purpose flour
2 ounces unsalted butter, melted
Vegetable Oil
10 cups water
2/3 c baking soda
In the bowl of a stand mixer fitted with the paddle attachment, mix together the water, sugar, yeast, and salt on a low speed for 10 seconds. Switch to the dough hook and add the flour and butter. Mix on low speed until well combined. Change to medium speed and knead until the dough is smooth and pulls away from the side of the bowl, approximately 4 or 5 minutes. Remove the dough from the bowl and transfer it to a well-oiled bowel. Cover the bowl tightly with plastic wrap and set it in a warm place for approximately 50 or 55 minutes or until the dough is doubled in size.
Preheat the oven to 425 degrees F. Line 2 large baking sheet with parchment paper. Set aside.
Bring the 10 cups of water and the baking soda to a rolling boil in a wide 8-qt saucepan or roasting pan.
In the meantime, turn the dough out onto a slightly oiled work surface and divide into 8 equal pieces. Roll out each piece of dough into a 24 inch rope. Slice each rope into 1 1/2 inch pieces. Place a lightly damp towel over the pretzel pieces to prevent them from drying out while you roll and cut the other pieces.
Using a slotted spoon lower and handful of pretzel pieces into the boiling water and boil them for 30 seconds, flipping them around in the water with a spoon a couple of times. Remove the pretzel pieces from the water using the spoon, drain as best you can, and place them on the baking sheets. Brush the top of each pretzel with the melted butter and sprinkle with the pretzel/kosher salt. Bake until dark golden brown in color, approximately 10-12 minutes. Brush with remaining melted butter before serving.
