Life of a young married couple is much more glamorous as people may think. It consists of buying non-smart phones when your iphone dies, not sleeping in the same bed several nights a week because your spouse is pulling all nighters trying to survive his last semester or having sleepovers on the couch, babysitting the neighborhood kids while their parents go to the temple, wearing the earrings from your wedding day, date nights consisting of watching 'Daddy Daycare' in bed with a bag of Flamin' Hot Funions, eating lunches consisting of turkey sandwiches, carrots, apples, celery, and cucumbers, trading kisses for lives on Candy Crush, not keeping your bedroom clean, and a social life consisting of having people over for dinner on Sunday nights.
It doesn't get much better than that.
Tonight we had some new friends over for dinner. Although I felt like the chewy chocolate chip cookies that I made were going to be a show stopper... until Samuel found a recipe for Turkey Burgers. Growing up in a household full of mostly men I thought that a meal wasn't complete without a big giant slab of red meat (...or chicken). Since I've been married I've come to find that it is socially acceptable (and filling) to have a salad. I've also come to find that I'm having a love affair with the Turkey burgers that my (chef-like) spouse creates.
As much as I am not a fan of food blogs, I'm dying over how good these were. On account that I wasn't able to snap a photo with my (deceased) iphone, I had to steal one from the website.
Enjoy!
Stuffed Fiesta Turkey Burgers
1 pound ground turkey1 large clove garlic, minced
3 tbsp minced onion
2 tbsp minced red bell pepper
1 tbsp minced green onion
2 tsp minced fresh cilantro
1 tsp cayenne pepper
1 tsp ground cumin
salt and pepper to taste
pepper jack cheese
Mix the ground turkey, garlic, onion, red bell pepper, green onion, cilantro, cayenne pepper, cumin, salt, and pepper together in a bowl. Divide the mixture into 8 small patties. Place two of the pepper jack cheese quarters onto each of 4 of the patties; top with the remaining 4 patties so the cheese is in the center. Press along the edges of the burgers to seal.
Place a large skillet over medium-high heat. Cook the burgers in the skillet until no longer pink in the center and the juices run clear, about 6 minutes per side (allrecipes.com).
